Gluten/Dairy Free and Healthy, Strawberry Stuffed (Faux) Waffle Sandwiches

I am calling this recipe a waffle sandwich but truthfully it is really a super quick and easy "kid friendly" breakfast which is not actually made from traditional waffles. I made these yummy little sandwiches from healthy millet and chai gluten free bread, non dairy cream cheese and fresh strawberries. Of course you can use your imagination and make this with a variety of other fruits and spreads. Another favorite of mine is almond butter and bananas. As I am sure you are, I am always looking for new creative ways to get the kids to eat a delicious healthy breakfast before school in the morning. I think both you and your kids will be looking for seconds!





Recipe:


Ingredients: Makes 4 sandwiches

  • 8 slices of your favorite gluten free bread  Note: I used Udi's Millet and Chai gluten free bread.
  • 1/2 cup of Daiya cream cheese alternative  Note: I used the strawberry flavor but the plain will work well too.
  • 1 tablespoon honey
  • 1/3 cup of gluten free granola 
  • 1 1/2 cups fresh sliced strawberries
  • 2 tablespoons of chopped nuts or seeds  Note: I used sunflower seeds.
  • cooking spray  Note: I used Glick's which is gluten, soy and dairy free.
  • honey for drizzling over the waffles (optional)
Preparation:
  1. In a small bowl stir together cream cheese and 1 tablespoon honey. Spread one side of  all eight bread slices with cream cheese mixture. Top four of the bread slices with strawberries, granola, and nuts or seeds. Top with the remaining four bread slices, spread sides facing down.
  2. Coat a waffle maker with cooking spray; heat according to the manufacturer's directions. Cook sandwiches, one at a time, in waffle maker about 2 minutes or until golden. When done, use a fork to lift sandwich off grid. Cut sandwiches into halves or quarters. If desired, drizzle with additional honey or fruit.
