Fresh Spring Pea Puree With Mint

Fresh Spring Pea Puree with Mint is something you can do in just a few quick minutes. This recipe makes for a delicious side with almost all meat and fish dishes. It is particularly lovely with oily fish such as salmon or chilean sea bass. Not only is it tasty and healthy but as a wonderful bonus beautiful to look at. Personally, the vibrant green color of the peas and mint remind me of the much awaited beginning of Spring.


Spring Pea Puree



Recipe:

Ingredients:


  • 2 16 ounce packages of frozen peas thawed, or 32 ounces of fresh cooked peas
  • 6 sprigs of fresh mint leaves
  • 2 6 ounce containers of  "Greek Style" plain flavor coconut milk yogurt  Note: I like the SO Delicious brand. 
  • 2 garlic cloves, minced
  • pinch of sea salt
Preparation:

Put all the ingredients into a large bowl and puree with an immersion hand blender of throw them all into a food processor and process until smooth. This dish makes for a wonderful pairing with simple grilled fish or poultry.
