Spring Pea Puree |
Recipe:
Ingredients:
- 2 16 ounce packages of frozen peas thawed, or 32 ounces of fresh cooked peas
- 6 sprigs of fresh mint leaves
- 2 6 ounce containers of "Greek Style" plain flavor coconut milk yogurt Note: I like the SO Delicious brand.
- 2 garlic cloves, minced
- pinch of sea salt
Preparation:
Put all the ingredients into a large bowl and puree with an immersion hand blender of throw them all into a food processor and process until smooth. This dish makes for a wonderful pairing with simple grilled fish or poultry.
