Healthy Gluten Free Microwave Chocolate Cake in a Mug

If you have never tried those "Warm Delights" single serve cakes that you make in the microwave, you are missing out! What a terrific concept. Of course if you are gluten, soy and dairy free or any of those like myself you have never had the luxury of trying the packaged version. With that in mind I did some research and experimentation and came up with this recipe for a "Healthy Gluten Free Chocolate Cake in a Mug" This cake is incredibly moist and decadent. I cannot imagine that the packaged version could be nearly this good! This cake is totally a "10" in my book! Not only is this cake amazing, but it takes less than 5 minutes to make!

Gluten Free Cake in a Mug


  • 1 egg
  • 1/4 cup applesauce
  • 2 tablespoons gluten free flour 
  • 4 teaspoons Stevia ( Alternatively, 2 tablespoons honey can be used.) 
  • 4 teaspoons cocoa
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1 teaspoon non dairy milk of your choice Note: I used SO Delicious unsweetened coconut milk.
  • 1 tablespoon dark chocolate chips or chunks NoteEnjoy life Chocolate Chips and Chunks are both gluten, soy and dairy free.
  1. Spray a microwave safe mug or small dish with cooking spray. Note: Glick's cooking spray is soy free in addition to gluten free.
  2. Put all the ingredients into a mug or small bowl.
  3. Mix very well with a fork or small whisk (you do not want chunks of egg or applesauce in there.)
  4. Cook in the microwave on high for 2 minutes.
  5. Top it with your favorite topping (nuts, non dairy whipped topping, fruit, etc.) or enjoy it plain! So good!

  1. do i have to use the chocolate chips can I just use the cocoa powder?

    1. Yes, you can leave out the chocolate chips and the cake will still be yummy! Either way I think you will love this recipe. Thanks for visiting my blog.
