Easy Holiday Gluten/ Dairy Free Noodle Pudding

This recipe for Easy Holiday Gluten/Dairy Free Noodle Pudding is a variation of an earlier recipe that I posted lasted Fall. I have made this version even healthier by switching out the butter substitute for Coconut Oil which I have recently found works just as well in this recipe. Additionally, coconut oil is a heart healthy food which has been shown to aid in the lowering of cholesterol. It naturally contains a saturated fat called lauric acid, a type of medium chain triglycerides (MCT) which increases the good HDL cholesterol in the blood to help improve cholesterol ratio levels. So go ahead and add this to your Passover or Easter Dinner! This makes either a delicious side dish or a yummy dessert!

  • 8 oz of wide noodles ("GEFEN" makes a wide noodle that is gluten, soy and dairy free and kosher as well.
