"Super Food" Kale Patties

As most of us know "super-foods" the new craze are super delicious and super good for you! This healthy recipe for Kale Patties is a truly scrumptious substitute for the sometimes rubbery tasting veggie patties we have all encountered. I cannot begin to express the goodness of this recipe without you trying it for yourself!


Recipe: Makes 4 Patties

  • 1 large bunch of kale
  • 1 teaspoon sea salt
  • 1 large tomato
  • 1 tablespoon almond butter
  • 1 clove garlic, peeled
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • Black pepper to taste
  • 1/2 cup almond flour
  • 1/2 cup frozen or fresh corn, cookedIf using frozen corn make sure to drain thoroughly. Note: The corn is optional and can be omitted for those following a grain free diet or have an allergy to corn.
  • 2 tablespoons olive oil
  1. Rinse the kale leaves under cold water.
  2. Cut the vein from each leaf and discard. Roughly chop the rest of the leaves and transfer to a medium sized bowl.
  3. Sprinkle the kale with the sea salt and massage it through all of the chopped kale.
  4. Slice the tomato into wedges cutting out the seeds. Place the tomato into a food processor.
  5. Add cumin, almond butter, garlic, paprika and black pepper.
  6. Pulse on low speed until smooth and well combined.
  7. Add the almond flour and gently mix again.
  8. Transfer the mixture back into the bowl that the kale was resting in.
  9. Add the corn and fold through with a spatula.
  10. Divide the mixture into 4, forming each one into a patty shape with your hands. Be sure to use a little almond flour to dust your hands thus preventing the mixture from getting too sticky. 
  11. Place each burger onto a cookie tray which has been dusted lightly with flour.
  12. Heat the olive oil in a skillet over a medium to low heat. Place the burgers into the hot pan and cook on one side for about 4 minutes and the burger has formed a nice dark crust.
  13. Turn over the burgers and repeat on the other side. Enjoy with your favorite burger toppings!
