Homemade Dairy and GF Peach Sorbet

This recipe for Homemade Dairy and Gluten Free Peach Coconut Sorbet is shockingly as easy to make as it is delicious! I was in the market today and I have to say they had the most gorgeous peaches. Once home, I could not decide whether to make this peach sorbet or my famous peach pie. Being that I was short on time I opted to make the sorbet (clearly did not disappoint) this time and will definitely make the pie with my next batch of peaches. This recipe makes an incredibly refreshing sorbet and although I used peaches today you can substitute them with blueberries, strawberries, cantaloupe etc. or any variety of summer fruits you like. So give this recipe a whirl as I am certain you will love this sorbet as much as I do!








Recipe: Yields about 8 servings

Ingredients:

  • 11/2 pounds of fresh peaches, pitted (about 4 large ones peaches)
  • 1 cup unsweetened coconut milk
  • 1 pint vanilla flavored coconut milk
  • 1/4 cup honey 
  • 1 teaspoon vanilla extract
Preparation:
  1. Add peaches, unsweetened coconut milk and half of the vanilla flavored coconut milk to a food processor or blender. Blend until it is the consistency of a smoothie. While running, add the rest of the vanilla coconut milk, vanilla extract, and the honey. Blend again until combined.
  2. If you have an ice cream maker pour mixture into it and churn according to directions. Transfer the churned sorbet into a freezer-safe bowl and place in the freezer for at least 2 hours to let the sorbet solidify and be scoop-able. NoteIf you do not have an ice cream maker, just put the sorbet directly from the food processor into the freezer.

  3. I've been soooo enjoying making healthy ice cream with frozen bananas in a food processor and it turns out so delicious, like soft serve. I don't have an icecream freezer and am wondering if using frozen peaches in your recipe would yield the same instant results?
