Strawberry Breakfast Crepes (GF/DF)

Here is a simple but delicious GF/DF ( Paleo friendly) Crepe Batter Recipe which can be made in minutes. Crepes are actually easier to make than you might think. This is a bare bones basic recipe with minimal ingredients. These crepes on their own are a little plain which can actually be preferable if you really want to feature a filling or a topping. It may take a little practice before you start making perfect crepes, but stick with it. Once you realize how easy it is, you'll want to make crepes all the time. Not only are these crepes great for breakfast but also double as a fantastic gluten and dairy free delicious dessert especially when filled with preserves or fresh-sliced strawberries, raspberries, or peaches, and lightly dusted with powdered sugar.


  • 3 eggs
  • 1 cup non dairy milk  Note: I used SO Delicious Coconut Milk for this recipe
  • 1 teaspoon vanilla
  • 3 tablespoons coconut oil, melted, plus a little extra for the pan 
  • 1/3 cup of coconut flour
  • 1 tablespoon arrowroot
  • pinch of salt
  • 1 tablespoon sugar ( optional)
  • 1 teaspoon lemon zest
  • strawberry preserves and fresh berries for both stuffing and garnishing the crepes 
  1. Whisk eggs in a large mixing bowl. Add non dairy milk, vanilla, and melted coconut oil. Whisk in arrowroot, salt, and sugar. Stir in lemon zest and let batter rest for half an hour.
  2. A few minutes before cooking, heat a wide pan (6 to 7 inches) to medium high heat. When hot, add a little bit of coconut oil and spread across the pan evenly. Remove pan from heat to prevent smoking.
  3. Stir the batter and pour 1/4 cup of crepe mixture into the pan, tilting the pan around all sides so that the batter coats the base of the pan evenly.
    Cook for 1 to 2 minutes until golden, then flip over. Cook the other side of the crepe for only a few seconds then place onto a serving plate.
  4. Repeat the process until you’ve made as many crepes as you want. Add a little coconut oil to the pan periodically to keep the crepes from sticking.
  5. Top with strawberry preserves and garnish with fresh fruit if desired.
