SUMMER STRAWBERRY SOUP

I have always wanted to try a cold fruit soup, but never had the occasion. I made this the other day for a ladies luncheon and everyone polished off their bowls and gave great compliments. I did not add sugar, as the fresh strawberries I bought were already naturally sweet. It was perfect! You will be amazed that just four ingredients can create something so spectacular! This recipe for delightfully fruity "Strawberry Soup" is certain to become a new summertime favorite.



CHILLED  SUMMER STRAWBERRY SOUP


Recipe: Yields 6 servings

Ingredients:

  • 2 cups of coconut milk "vanilla flavored" yogurt
  • 4 pounds fresh strawberries, halved 
  • 1 cup orange juice
  • 1 teaspoon vanilla extract
  • Additional vanilla yogurt and fresh mint leaves, optional
Preparation:

In a blender, combine the yogurt, orange juice, vanilla extract and strawberries; cover and process until blended. Refrigerate for at least 2 hours. Garnish with additional yogurt and mint leaves if desired. ENJOY!
